Masterchef The Professionals BBC2, Monday 14 September 8:30pm - 9:00pm The young chefs taking part in this competition all work in professional kitchens, so you'd expect them to produce terrific food without any problem. "Cooking doesn't get better than this," bellows Gregg Wallace. Blimey, I hope it does. Tonight's competitors make a right dog's dinner of their dishes. Actually, some of them you wouldn't even give to a dog, let alone to Michelin-starred chef Michel Roux Jr. Roux replaces John Torode for this series, though the initial round - a nerve-racking skill and palate test against the clock - is judged by sous-chef Monica Galetti. Her frowns of disbelief and downright horror would curdle milk. "You've failed that completely," she bluntly tells one hopeful. Roux, however, can devastate with words that aren't even especially harsh: "It's not dressed very well...this basmati rice, risotto thing...is not right either," he tells one crestfallen lad. And do we detect a slight air of over-awed uncertainty from Mr Wallace, too? VIDEO Plus+: 7725
