I know I'm later joining this thread so late in the Shuttle mission but have only just spotted it.
An excellent place for live satellite coverage is via the Associated Press Television News Transponder on the Eutelsat at 10 East.

I'm been watching hours of NASA TV via this channel. All the EVAs and the press conferences.

Check the 'previous missions' section as it might have programs for today and tomorrow.
It currently has details of the Shuttle landing Monday Morning.
Transmissions are normally is standard digital though they have started using HDTV 4:2:2 format .For this you can use a HDTV Satellite receiver designed for Quali TV which with the latest firmware decodes 4:2:2 perfectly. The down side is that you need to be a dedicated feed hunter to splash out the £400 ish to buy one. They used to only be available with a 5 year subscription to the HDTV service on Astra 19.2 East for £500 but there is at least one company that'll supply them without at the lower price but I beleive the order them in batches.
Getting back to things there is mailing list for ESA news which includes programming information for forth coming tv and there is also a mailing list with NASA for news of Shuttle and unmanned space flights.
Also if you use tracking software there are a couple of mailing lists to get the data needed to get the programs to track orbiting objects. And during a Shuttle mission you get almost daily updates of the data needed to track it.
