If I had to pick one housemate per series (not neccessarily my favourites in all cases, sometimes who might be best viewing value):

BB3 - Alex
BB4 - Jon
BB5 - Victor
BB6 - Derek

BB8 - Gerry (or Munkety Tunkety)
BB9 - Rex
BB10-Freddie/Marcus

Most unwatchable BB I think I'd have to include...Nikki, Charley, Charlie, Lisa BB10, Jayne, Grace, Sezer, Maxwell, Carole, Jonny, Belo and Nathan off the top of my head.
